Creamy Avocado Citrus Salad Dressing !!  No Oil or Dairy. 
Ingredients (Local, organic + non-GMO if possible!):
1 ripe avocado
¼ c raw apple cider vinegar
¼. c. raw honey (or maple syrup)
3 T. lime juice
1 clove garlic
¼ c. cilantro
½ small jalepeno (or your preference)
¼ c. water or more, to thin to preference
Salt and pepper, to taste

No Bean Spicy Jalapeno Hummus

No Bean Spicy Jalapeno Hummus

2 medium zucchini, peeled and rough chopped
1/4 c. tahini
juice of 1 lemon
juice of 1 lime
1 jalapeno, seeds and ribs removed
1 clove garlic
2-4 T. olive oil
salt and pepper to taste

Directions:
  • Put the zucchini, tahini, lemon juice, lime juice, jalapeno and garlic in your high speed blender or food processor (I use my Ninja).
  • Process until smooth, stopping to scrape down the sides.
  • With the motor running, stream in the olive oil. I say 2-4 tbsp because the amount you use will vary depending on how much water is in the zucchini and how thick you like your hummus.
  • Taste, and season with sea salt and pepper to taste. Serve with cucumber slices, bell pepper, carrots or whatever you prefer to eat your hummus with. Enjoy!

Mango Salsa

Serves: 4, Yield: 4.5 cups

Ingredients

2 cups mangoes, cut into 1/4-inch to 1/2-inch pieces
1 medium red pepper, diced into 1/4-inch to 1/2-inch pieces
1 medium cucumber, diced into 1/4-inch to 1/2-inch pieces
1/4 red onion, diced into 1/4-inch to 1/2-inch pieces
1 jalapeno, finely minced
1/4 cup fresh cilantro (chopped)
1 limes, juice of or 2 tablespoons lime juice
1 tablespoon sugar
1 pinch salt


Directions

1. If using frozen mangoes, thaw and then cut into 1/4" to 1/2" pieces; place in mixing bowl.
2. Cut ends of cucumber and peel skin. Cut in half lengthwise. Using a spoon scrape out seeds. Dice into small pieces and add to the mixing bowl.
3. Dice 1/4 of a red onion and a whole red pepper; add to bowl.
4. Mince the jalapeno and add to bowl. If you like heat or spice, leave the ribs inches If you don’t want extra spice, cut out ribs and seeds. If your skin is sensitive to the heat, wear gloves or coat hands with a small quantity of salad oil, which makes it much easier to rinse the pepper from your hands. This is a must for contact wearers.
5. Chop cilantro and add to bowl.
6. Squeeze juice from one lime (approximately 2 tablespoons) and add to bowl.
7. Add sugar and salt; stir.
8. Refrigerate until needed.

From Scratch Taco seasoning

This is another one of those recipes a friend shared so grab it now...you will not find it in our pinterest boards! (unless I can find it somewhere else)
Make your own Ranch, Dry Onion Soup Mix and Taco Seasoning and store in small mason jars.


Taco Seasoning:

1/2 cup chili powder
1/4 cup onion powder
1/8 cup ground cumin
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon sea salt
Put ingredients into a jar and shake.

Dry Onion Soup Mix:
2/3 cup dried, minced onion
3 teaspoons parsley flakes
2 teaspoons onion powder
2 teaspoons turmeric
1 teaspoon celery salt
1 teaspoon sea salt
1 teaspoon sugar
1/2 teaspoon ground pepper
Mix all ingredients in a jar, then give the jar a good shake. I’d recommend shaking the jar to mix the ingredients well before each use. 
Use 4 tablespoons in a recipe in place of 1 packet of onion soup mix. Store this in a dry, cool place.

Ranch:
5 tablespoons dried minced onions
7 teaspoons parsley flakes
4 teaspoons salt
1 teaspoon garlic powder
Mix together and store in an air tight container.
For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
For dip: Mix 2 tablespoons dry mix with 2 cups sour cream.
Mix up a few hours before serving, so the flavors all blend.

Snickers Dip


~SNICKERS DIP~

1 -2 blocks of cream cheese, 8 oz softened
8 oz. container of cool whip
¼ cup brown sugar
4 regular sized Snickers bars, cut into small pieces with the Crinkle Cutter

This is super simple to make.... Just mix the cream cheese, cool whip, and brown sugar together and then add in the Snickers bar pieces. Serve with vanilla wafers, strawberries, graham crackers, etc.

White Bean Dip

Makes 6 serving of  ¼c each
1 19-ounce can cannellini beans, rinsed and drained
1 clove garlic
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice, plus more as needed
Kosher salt
Freshly ground black pepper

Combine all ingredients in a food processor. Puree. Taste and see if you like the results. If not, add more of what's missing. Serve.

Homemade White Beans

1# Great Northern White Beans, sorted
3 Cloves Garlic, whole and cracked/crushed, you want it in 1 piece
1 Onion, chopped
Water

Place sorted beans in a medium pot, cover with 2 inches of cold water. Bring to a boil, turn off, cover and let sit for 1 hour.
Drain.
In a Large Pot, place drained beans, garlic, onion. Cover with 3 inches of cold water.  Bring to a boil, simmer for 1½ to 3 hours. Check every 15 minute until they are to the desired tenderness.  Drain, reserve liquid if desired or needed for recipes.
Yield: Four 16oz cans beans.
