Grilled Brussels Sprouts

Grilled Brussels Sprouts

1 pound Brussels sprouts, as uniform in size as possible*
2 tablespoons olive oil
1 tablespoon minced garlic
1 teaspoon dry mustard
1 teaspoon smoked paprika
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

*Cook's Note: In order to facilitate even cooking, it is important that the Brussels sprouts be as uniform in size and shape as possible.

Heat a grill to medium. Cut off the stem end of the Brussels sprouts and remove any yellowing outer leaves. Place the Brussels sprouts into a large, microwave safe mixing bowl and heat in the microwave on high for 3 minutes. Add the olive oil, garlic, mustard, paprika and salt and toss to combine. Allow the sprouts to cool until you can handle them. Skewer 4 to 5 Brussels sprouts onto each metal skewer with the stem ends facing in the same direction, leaving at least 1/2-inch in between each sprout. Place the skewers onto the grill with stem end closest to the flame. Cover and cook for 5 minutes. Turn the skewers over and continue to cook for another 5 minutes. Serve as is or for additional flavor, remove the sprouts from the skewers, return them to the original mixing bowl and toss with any of the remaining oil and garlic mixture before serving.

2 chicken breasts
4 small red potatoes
3 zucchinis
3 ears of corn
olive oil

Soak 8 wooden skewers in water for 30 min. Pre heat oven to 375 Cut chicken breasts into cubes (about 1 inch) Cut potatoes in halves, the zucchinis and corn into 1 inch rounds Place ingredients onto skewers in the following order: corn, potato, chicken, zucchini. Brush kebabs with oil. Sprinkle with salt and pepper. Bake till veggies are tender and chicken is done. About 20 min.

Grilled Vegetable Sandwich


Grilled Vegetable Sandwich w/ Herbed Mayo

1 Japanese eggplant sliced lengthwise about 1/4" thick
1 small zucchini sliced lengthwise about 1/4" thick
1 small yellow squash sliced lengthwise about 1/4" thick
1 small red onion cut into rings
 2-3 Portobello caps
 extra virgin olive oil
salt & pepper
1 loaf crusty bread, cut into 1/2" slices
 red leaf lettuce
1 large roasted red pepper, sliced lengthwise   (I use jarred)
Herbed Mayo (below)
Heat a grill or grill pan.  Lay all the vegetables on a large sheet pan.  Drizzle with olive oil and season with salt and pepper.  Flip all slices, drizzle with more olive oil and season with salt and pepper.  Grill until the vegetables are tender and have grill marks.  When the vegetables are almost done, drizzle a little olive oil on the slices of bread and grill on both sides.
Slice the Portobellos.  Spread mayo the slices of bread. Assemble the sandwiches with the grilled vegetables, lettuce, and roasted red pepper.
Herbed Mayo
1 clove garlic
about 3/4 c mayonnaise
juice of 1/2 lemon
a few drops of hot sauce
2 Tbsp thyme leaves
2 Tbsp flat leaf parsley
2 Tbsp chopped chives

For a smooth spread, smash the garlic and add it, along with the rest of the ingredients to a food processor.  Pulse until smooth.
Or, mince the garlic and add to a bowl with the rest of the ingredients.  Stir to combine.
Best of made a few hours ahead.

Grilled Shrimp, Sausage, Mushroom and Red Pepper Kabobs


I have to share this recipe that I made up entirely by myself (yay me!).  It was so good and light - perfect for adding to the rotation as we come into summer!  You can easily switch out the ingredients to your liking. -mom2brs
Grilled Shrimp; Sausage; Mushroom & Red Pepper Kabobs

Ingredients:
3/4 lb raw shrimp; peeled and deveined
1 pkg of raw mushrooms - cleaned and de-stemmed
1 red pepper, cut into lengths and small pieces
1 pkg chicken sausage (mine was flavored with pesto...but there are spicier versions)
Italian dressing
Lemon pepper
Olive oil
Garlic
Directions:
Night before 
Sautee sausage about 3/4 through cooking; set aside on paper towels to drain and cool.  
Peel and devein shrimp; cut pepper and clean/ de-stem mushrooms (keep only the tops of mushrooms)
In separate plastic bags, put Italian dressing for any component you want to marinade in it (I did mushrooms and peppers); put lemon pepper seasoning; garlic and olive oil for others ( I did the shrimp in that) and the cooked items (i.e.: sausage - goes in a separate bag)
Refrigerate / Marinate overnite
Night Of:
Soak wooden skewers for 30 minutes in cold water
Preheat oven to about 350 degrees
Load your skewers with your items (I separated half cooked items from raw)
Veggies cook a little longer - so put them on first for about 10 minutes total (rotating throughout)
Shrimp and pre-cooked items take 3-5 minutes (rotating throughout)
I served over brown rice.  It made an amazing meal!

Dinosaur BBQ Mutha Sauce

I guess I'll start. I made ribs this weekend with the Dinosaur BBQ Mutha sauce. The sauce is excellent but makes a TON. I rubbed the ribs with a rub and put them in a glass baking dish covered with foil for 4.5 hours at 225. Then at 4.5 hours I took them out and basted them with the BBQ about every 10 minutes for 30 minutes. They were excellent.

Directions:

    Pour the oil into a large saucepan over medium-high heat.
  2. 2
    After oil has heated, add the onions, green peppers, and jalapenos and stir.
  3. 3
    Add a pinch of sa1t and pepper and cook until vegetables are soft and onions are golden.
  4. 4
    Add the garlic and cook for 1 minute more. Add remaining ingredients except the Liquid Smoke.

    Bring to a boil, then lower the heat so the sauce simmers.

    Simmer for 10 minutes.

    Turn off heat, add the Liquid Smoke and let the sauce cool.

    Pour it into a container, cover, and store in the fridge until ready to use

Summer Vegetable Kabobs

Summer Vegetable Kabobs

Makes 8 servings Southern Living, MAY 2008

12-inch-long wooden skewers
1/4 cup dry white wine
1/4 cup honey
3 garlic cloves, minced
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1 1/2 teaspoons pepper
1 teaspoon salt
16 cups assorted cut vegetables

1. Soak skewers in water 1 hour.
2. Whisk together wine and next 6 ingredients until well blended; reserve 1/4 cup. Combine remaining white wine mixture and vegetables in a large bowl. Cover and chill at least 30 minutes or up to 2 hours. Remove vegetables from marinade, discarding marinade.
3. Preheat grill to 350° to 400° (medium-high). Thread vegetables onto skewers, and grill according to directions in Guidelines and Cook Times for Vegetable Kabobs below.
4. Transfer skewers to a platter. Remove vegetables from skewers, if desired. Serve with reserved 1/4 cup white wine mixture.

Guidelines and Cook Times for Vegetable Kabobs. Cut vegetables thick so they will stay on skewers as they cook. Thread one type of vegetable onto each skewer, threading so the cut sides lie flat on the cooking grate to ensure even cooking. Grill skewers, covered with grill lid, over 350° to 400° (medium-high) heat according to the times below. Your goal is to achieve tender, slightly charred vegetables.

Zucchini and squash. Prep: Cut into 3/4-inch rounds; thread onto skewers. Grill time: 7 to 10 minutes on each side or until tender.

Okra. Prep: Remove stems, and thread onto double skewers. Grill time: 6 to 8 minutes on each side or until tender.

Eggplant. Prep: Cut Japanese eggplant into 3/4-inch rounds. Cut Italian eggplant crosswise into quarters; cut into 3/4-inch slices. Thread onto skewers. Grill time: 5 to 6 minutes on each side or until tender.

Bell peppers. Prep: Cut into 1-inch-thick strips; thread skewers. Grill time: 4 to 5 minutes on each side or until tender.

Mushrooms. Prep: Trim stems, and thread onto skewers. Grill time: 3 to 5 minutes on each side or until tender.

Onions. Prep: Cut into wedges, and thread onto skewers. Grill time: 3 or 4 minutes on each side or until lightly charred.

Cherry tomatoes. Prep: Thread onto double skewers. Grill time: 1 to 3 minutes on each side or just until skins begin to split.

Marinated Grilled Vegetables

1 cup cherry tomatoes - halved
1 small zucchini - cut into 1/4 inch rounds or semi-circles
1 small summer squash - cut into 1/4 inch rounds or semi-circles
1 orange bell pepper - cut into large chunks
2 cups button mushrooms - halved
1/2 yellow onion - cut into large chunks
1/2 bottle Newman's Own Balsamic Vinaigrette

1. Add all veggies to a gallon size ziplock bag and pour dressing over. Seal bag and toss to evenly coat vegetables.
2. Marinate for at least 2 hours, to overnight.
3. Pour vegetables onto a vegetable grill tray and grill for 15-20 minutes or until preferred doneness.
Renee's Notes: I have also used peapods, chopped up asparagus, broccoli florets, etc. You can switch up to your liking. Obviously use whatever dressing you prefer, but the balsamic is great with the tomatoes. I've also made this in a foil packet on the grill, or just in a casserole dish in the oven.

Grilled Cabbage

· 1 head cabbage

· 4 teaspoons butter

· 4 slices bacon

· 1 teaspoon salt

· 1/2 teaspoon garlic powder

· 1/4 teaspoon pepper

· 2 tablespoons grated parmesan cheese

Spice mix

1. Cut cabbage into four wedges.

2. Place each wedge on a piece of doubled heavy-duty aluminum foil.

3. Spread cut sides with butter.

4. Mix spices together in a small container and sprinkle all of the mixture equally over each wedge.

5. Wrap bacon around each wedge.

6. Fold foil around cabbage, sealing each wedge tightly.

7. Grill cabbage, covered, over medium heat for 40 minutes or until the cabbage is tender, turning twice.
